I was pondering this today. Not that I was hungry or anything! My snack repertoire has, thankfully, expanded quite a lot recently due to getting a load of foods back at last, hoorah!
So, mine is currently a slice of my almond flour and flaxseed bread with nut butter and a pure jam (currently St Dalfour’s strawberry). Or, I have made a kind of flapjack from pulsed dried coconut, dried fruit (I use unsulphured apricots, raisins, dates, whatever I have in etc), almond flour, salt, bicarb and honey. Delish. It doesn’t look that pretty but it tastes yummy.
Both recipes are quite filling. I deliberately add extra flax meal to the recipes as it absorbs fluid and is very filling – as well as helping to balance hormones as it is a great phyto-oestrogen!
I am absolutely loving eating satsumas and oranges again, too. Plus a dish of blueberries. A banana, sometimes dipped in almond flour or coconut with some honey if I need sweetness. The odd bit of very dark chocolate (although I’m not that lies me still). Anyway, you get the gist – food is once again exciting for me, I hope it is for you too.
