From Goodness Foods, here’s a simple but versatile wheat and dairy free fruit cake which can be used as a lovely Christmas cake I’ve found. It gets better with storage so you can make it in advance, or even make a couple.
8oz rice flour
4oz dates, chopped finely
4oz water
1tsp cinnamon
2 eggs
4tbsp oil
1 tsp vanilla
8oz of mixed chopped dried fruit
1 apple, grated or pulsed
3 fl oz soya or rice milk
3 oz glace cherries or 4oz nuts or 2 grated carrots.
Slowly cook the dates in the water until you have a smooth paste (or blend it).
Mix the flour and spices, then add all the liquid ingredients, (eggs, date mix etc) and stir. Add all the dried fruit and nuts and combine well. Bake in a well-greased and lined 9” baking tin at 160 degrees C for 1-1.5 hours. Enjoy! All slices of home-made cake gratefully received!
