Christine Ann sent in this link to a US/Canadian porridge that might be useful for TGF and AIP people, thank you C :).
They make it out of: Tiger Nuts, Coconut Milk Powder, Shredded Coconut, Ground Cinnamon, Sea Salt.
It strikes me that should be quite simple to make at home. Just combine those ingredients in varying quantities and adjust until you get it right. Note, though, that coconut milk powder often also contains a maltodextrin. That could be from corn, but is often from tapioca. I wonder if the manufacturers of this mix have checked that…?
To be honest, you could just mix the tigernut flour with coconut milk and do the same job. Might not be as creamy. Try adding the coconut cream in from the top? Here’s a recipe for that I just found:

If you are hyper-sensitive to stuff – including the linings of tins, simply melt shavings of coconut cream and water. Simples.
So, where to get stuff?
Tigernut flour – this is the one I’ve used successfully in the past, or you can grind whole tigernuts if you have a powerful grinder.
Coconut Milk powder – make sure yours is tapioca maltodextrin and not corn if using. I like this Sweet Revolution one, they use it in their gorgeous drink mixes too (not checked each one for TGF/AIP compliance, just sharing as a thought). If in doubt, just use coconut cream and water. You should also be able to find that in your supermarkets but note this one doesn’t have sulphur dioxide.
Then add your flavouring of choice – shredded coconut, cinnamon and salt are easy to get, of course. I think I’d be tempted to add some kind of fruit puree, berries, even apple sauce to it. Mmm: apple sauce and cinnamon, now there’s an idea!
