I Make This About Twice A Week

I do this about twice a week and often add fennel, sweet potato and throw some asparagus in towards the end. Keeps me going for about 3 days. I have it with wild (unfarmed) fish.

It’s quick, flavourful and so easy – just stick it in the oven and mix around a few times. I like to let some of the veggies go crunchy to give it more texture and flavour sometimes. You can swap the veggies for whatever is safe and tasty for you. Sometimes, with about 20 mins to go, I add rounds or strips of cabbage or thin/halved broccoli stems and let those crunch up. Delicious.

I originally started doing roasted veg with olive oil to put on some weight – it’s quite effective if you need that. I’ve gradually cut down the oil amount so it cooks but I don’t gain weight with it!

I don’t use black pepper. I use extra virgin olive oil – not the really expensive stuff, but supermarket-own – because I think you get a richer flavour. And I might sometimes throw in some chopped capers towards the end to pep it up a bit as I can’t yet do many herbs or spices. If I could, I might cumin or even chilli flake them, maybe even seaweed flakes or flavoured salt.

Anyway, it’s my go-to meal for most nights. I’m wondering if this would work well in an air fryer – has anyone done roasted veggies in one? Do let me know. What’s your go-to easy recipe, do share so we can all learn some new ones?!

I do a similar tray bake of roasted veggies regularly too and always have loads to use cold with salads etc. You’ve given me inspiration of changing the veggies I include so thanks for the inspo. I don’t need to put on any more weight so I’ll watch the oil, I don’t use much anyway, but am struggling with putting on weight at the moment. I don’t have an air fryer but it’s one of those things i’d love to have but don’t have the space or money to invest in one.
