Your second Coeliac Week tip: Chewy Chocolate Brownies.
Today, I fancied a treat so I made up half a batch of the Miss Roben’s Chewy Chocolate Brownies. I halved the oil you are meant to add and added a bit of pineapple juice I had in the fridge instead. Delish! I don’t know how the mix does it, but they go sort-of crunchy on the top and gooey underneath. I don’t have much experience of brownies but Philip (who had some recently) says they are very authentic. OK, so not healthy or good for you but for those moments out of your 80/20 healthy rule when you fancy a naughty treat, at least they are truly gluten, grain, dairy, nut and soya free.
Ingredients are: refined cane sugar, tapioca starch, cocoa, potato starch, guar gum and salt.
I’m sure I could make them just as quick myself, and will probably improve on the recipe to get some healthier stuff in them at some point, but have to say, for now, they hit the spot and I really enjoyed one with a coffee this morning
