12 Soups for Warmth and Comfort

It’s getting cold out there, isn’t it? I say this as I sit with no heating on waiting for the boiler service to be done. Why do they promise 8am and never come til hours later? Anyway, hence, my thoughts are turning to warm things!

Saw these 12 soup ideas in my inbox this morning from Restless, thought you might like them. Not sure I agree with their ‘healthy’ moniker on some of them, but you can adapt them to make them better, of course – I have taught you well 😉 For example, I’ve been using chickpea rice or lentil spaghetti cut up to make a minestrone veg version, or I use the pulp left over from juicing to thicken my soups. I use arrowroot to thicken instead of corn, or almond/cashew flour/milk.

The great thing about soups, too, is that they help you save energy and money. Make a big pot in a slow cooker or on a low heat in the oven, then freeze in batches.
